The local sweet of Okinawa : Chin-Bin

Hello.
This is May in Japan.

I cooked a Japanese local sweet, "Chin-Bin",the other day.
Chin-Bin is a local sweet of Okinawa Prefecture. 




It is a kind of Crepe rolls.
It is obtained by baking dough comprising wheat flour, brown sugar, baking powder and water.

The crepe dough is sticky.
It has the sweetness of brown sugar.

It is so tasty !!

Japanese home cooking : Mame Gohan

Hello.
This is May in Japan.

My mother cooked a Japanese home cooking, "Mame Gohan".



Mame means green peas, Gohan means rice.
Mame Gohan is rice cooked with green peas and seasoned with salt.

This is the best season of green peas.
It is so tasty !!
I really love it !!

Handmade pudding

Hello.

A friend made the sweets for me.
The friend's hobby is making sweets.



This is a handmade pudding.


There is the caramel in the bottom.


The pudding is creamy !!
It has the flavor of eggs.

It's so delicious !!

How to make Onigirazu at the home

Hello.
This is May in Japan.

I introduced Onigirazu,last time.
Today I'd like to introduce how to make Onigirazu at the home.



Directions
1.Put one piece of seaweed on a plastic food wrap.


2.Put just cooked hot rice on the seaweed.


3.Put favorite ingredients on the rice.
(I use "Ume Furikake":dried food sprinkled over rice.)


4.Still more, put just cooked hot rice on the ingredients.


5.Fold the four corners of seaweed towards the inside.


The seaweed sticks together rice, because rice is warm.


6.Wrap it in a plastic food wrap, and wait until seaweed becomes soft.


7.cut it half and it is completed !!

It is so easy !!
Try it !!

Japanese home cooking : Onigirazu

Hello.
This is May in Japan.

I am into making "Onigirazu" recently.
Do you know "Onigiri" ?
Onigiri means a rice ball.
We say "Onigiri wo nigiru", it means we make a rice ball.
"Onigirazu" means we don't make a rice ball.



This is "Onigirazu".
It is the food which only wrapped the rice with seaweed.

It is not a rice ball, but it has the same taste as a rice ball.
It is easy to make !!
Next time, I'll introduce how to make Onigirazu at the home.

A friend made the sweets for me.
The friend's hobby is making sweets.



This is a confection made from sweet potatoes of hedgehogs.
It is so cute !!!
I hesitated to eat it because of prettiness.

But I ate it !
It is not very sweet.
It's so delicious !!

I cooked Kuri-no-shibukawa-ni this year.

Hello.
This is May in Japan.

I cooked a Japanese home cooking, "Kuri-no-shibukawa-ni",for the first time this year.



Kuri-no-shibukawa-ni is the food made with sweetened chestnut of boiled coating having astringent inner skin.
I understood the point of cooking Kuri-no-shibukawa-ni, because I cooked many times last year.

The result of this Kuri-no-shibukawa-ni was a success !!
It is so delicious !!

Hachimitsu Daikon

Hello.
This is May in Japan.

I caught cold.
I feel a pain in my throat.

When I have a pain in my throat, I eat "Hachimitsu Daikon".

Hachimitsu Daikon means Japanese radish pickled in honey.
It is said that Japanese radish and honey are good for the health of throat.

I hope my cold gets better soon.

Kuri-no-shibukawa-ni

Hello.
This is May in Japan.

I cooked a Japanese home cooking, "Kuri-no-shibukawa-ni".



Kuri-no-shibukawa-ni is the food made with sweetened chestnut of boiled coating having astringent inner skin.

We need to peel the hard skin of chestnut, and boil it, and peel the inner skin, and pull astringent juice, and boil it with sugar...
It takes so much effort to cook Kuri-no-shibukawa-ni.
But I love it.

Handmade granola

Hello.

A friend made the granola for me.
The friend's hobby is making sweets.


The ingredients are cornflakes, dried cranberries, almonds, walnuts.


The granola is coated sugar.

It is sweet and delicious !!

Japanese foods : Taco Rice

Hello.
This is May in Japan.

I cooked a Japanese food, "Taco Rice",the other day.


This is "Taco Rice".
Taco Rice is a local dish of Okinawa Prefecture.

It is a dish using the rice in substitution for the tortilla of tacos.
Vegetables and meat match rice very well.
I love eating it adding cheese.

It is so tasty !!

Good old home cooking : Iritofu

Hello.
This is May in Japan.

I cooked a Japanese home cooking, "Iritofu",the other day.


This is "Iritofu".
"Iri" means stir frying, so it means "stir frying tofu".

It's pretty simple to cook iritofu.
Pan-fry vegetables, add tofu which drained the water, and season it with noodle soup base.
The  noodle soup base is mixture of dashi, soy sauce, mirin and sugar.

Iritofu goes well with rice !!
I love it !

Good old home cooking : Dango jiru

Hello.
This is May in Japan.

My mother cooked a Japanese home cooking, " Dango jiru".


Dango jiru is a Japanese soup with dumplings.
It is a local specialty of Oita Prefecture.
The hometown of my mother is Oita.


This soup is the soy sauce-based soup with a lot of vegetables.
The dumplings are soft and sticky.

This soup made our bodies warm.
It is so delicious !!

Japanese foods : Tempura of Sillaginoid fish

Hello.
This is May in Japan.

My father went fishing and caught many fish.
The fish were Sillaginoid fish.

The sillaginoid fish are white fish which are low in fat and soft.
The fish are very delicious.
Tempura of Sillaginoid fish are especially delicious.


My mother cooked tempura of Sillaginoid fish.
The white fish are very soft and delicious !!
We couldn't stop eating !!

I want my father to go fishing again.

Japanese food : gomoku meshi

Hello.

My mother cooked a Japanese home cooking, "gomoku meshi".


This is gomoku meshi.
It is also called "Kayaku Gohan" in the Kyushu area.

Gomoku meshi is a type of Japanese dishes of rice.
It is made with rice mixed with various ingredients.



This is very delicious, so it is a popular home-cooked meal.

My mother cooked a Japanese home cooking, " Nikujaga".


Nikujaga is a kind of Nimono which boiled potatoes and meat.
It is representative of Japanese home cooking.
Japanese people love Nukujaga as good old home cooking.

The seasoning and ingredients vary from region to region and from home to home.
Nikujaga is very delicious.

How to cook Hashed beef easily at the home

Hello.
This is May in Japan.

I introduced the roux of Hashed beef,last time.
Today I'd like to introduce how to cook Hashed beef easily at the home.



Ingredients
a moderate amount of beef
2 onions (quarter slice)
a box of Hashed beef roux
(I added sliced carrots for my preference this time.)

It is so simple !!



Directions
1.Saute onions in a pan until its get brown.


2.Add the other ingredients and fry.


3.Add 750 ml of water as ingredients soak and boil.


4.The ingredients are cooked and stop fire. Add broke Hashed beef roux.


5.Boil while stirring for about 10 minutes to finish.

It's so easy !!!


It has a rich taste and so delicious !!
I like to eat it with rice.

Hashed beef can be easily cooked at home.

Hello.
This is May in Japan.

I cooked Hashed beef,the other day.
It is difficult for me to cook Hashed beef at home.

However, I can easily cook Hashed beef as long as I have this item.



This is the roux of Hashed beef.
There is on sale at any supermarket in Japan.
It costs around 300yen.



You can cook a dinner of 8 covers with this 1 box.

It is very easy and convenient !!
Next time, I'll introduce how to cook Hashed beef at the home.

My favorite !! Mame gohan ( Green peas rice ) !!

My mother often makes Bento for me.
Today's menu was my favorite food !!

I'd like to introduce my favorite menu.


The rice is green peas rice.
This is my favorite food !!

We call it "Mame gohan."
Mame gohan is rice cooked with green peas and seasoned with salt.

When green peas are in season, my mother makes it.


Today's menu were tamagoyaki, boiled snap peas,fish sausages,Nimono.
They were all delicious !!

How to cook OKONOMIYAKU at the home

Hello.
This is May in Japan.

I introduced OKONOMIYAKI, before.
Today I'd like to introduce how to cook OKONOMIYAKU at the home.


First, we mix the mixture for OKONOMIYAKI and water in a bowl.
Add eggs and chopped cabbage in it.
(This time, I added tubular fish meats and carrots.)
This is the dough of OKONOMIYAKI.


Bake it on the hot plate.
Put many slices of pork on it.


Turn over OKONOMIYAKI and bake it.
When the inside of OKONOMIYAKI is cooked, it will be cooked up.

We eat it pasting a mixture of a sauce and mayonnaise and pouring dried bonito flakes.
That was very delicious !!

We love OKONOMIYAKI.
